This Lunch Wrap Recipe Will Please Adults and Kids

Making interesting lunches every day is hard enough, without having to cater separately for your kids. The chances are, if you’re anything like most parents, you want tasty and versatile dishes that the whole family can enjoy—and you want them to be ready and on the table in under half an hour. Check out this great recipe for egg-topped tortilla wraps—you can add or take away ingredients to change the flavors, and they will be super popular with kids and adults alike.

Ingredients (to serve 4):

  • 4 tortilla wraps
  • 7 medium eggs
  • 2 tablespoons of oil
  • 1/2 cup of grated cheese
  • 1 cup of spinach, wilted in a pan
  • Salt and pepper, to taste
  • 2 tablespoons of tomato paste

Instructions:

  1. Heat the oil in a medium-sized frying pan.
  2. Whisk the grated cheese into the eggs, and season with salt and pepper.
  3. Stir the wilted spinach in through the egg.
  4. Spread a thin layer of tomato paste over one side of each tortilla.
  5. Place one tortilla into the hot oil with the tomato paste side facing up. Fry for 1 minute.
  6. Carefully pour some of the egg mix over the top of the tortilla, taking care that it doesn’t slide off the tortilla. Fry for 3 to 4 minutes.
  7. Once the egg is starting to set, carefully fold the tortilla in half using a spatula. You can also flip the tortilla at this point if you wish, but if the egg isn’t set enough there is a risk you may lose some of your topping.
  8. Once the tortilla is browned and the egg is set, remove the tortilla from the pan.
  9. Repeat this process until all of the tortillas are cooked.
