Easy Chicken Pot Pie Recipe Your Kids Will Love

Finding a meal that’s both nutritious and kid-approved can feel like hitting the jackpot for many parents. This simplified version of the traditional chicken pot pie recipe is just that. It’s designed to minimize prep time without sacrificing flavor, making it a perfect addition to your family meal rotation.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups of mixed vegetables (carrots, peas, corn, and green beans work well)
  • 2 cups cooked chicken, shredded (rotisserie chicken is a great time-saver)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 teaspoon dried thyme (optional)
  • 1 refrigerated pie crust (or homemade if you prefer)

Instructions:

  1. Preheat your oven to 375°F. 
  2. Heat olive oil in a skillet and sauté chopped onion and garlic until fragrant.
  3. Add mixed vegetables and cooked chicken, stirring until slightly softened. Mix in cream of chicken soup and chicken broth, seasoning with salt, pepper, and thyme. 
  4. Simmer until thickened, about 5 minutes. 
  5. Transfer to a 9-inch pie dish, cover with pie crust, crimping edges, and making slits on top. 
  6. Bake for 35 minutes or until golden.
  7. Let the pie cool for 10 minutes before serving.
