It’s at times like these that the temptation to order a takeaway or see what you have in the freezer arises. However, if you’d like for you and your kids to eat healthy, why not try this simple, tasty, and super nutritious stir fry recipe? It can be ready on the table in under 10 minutes, and its mild yet rich flavors mean it’s sure to be a hit with everyone.
Ingredients (to serve 4):
- 4 noodle nests
- 1 thumb-sized piece of ginger, peeled
- 1 onion
- 2 carrots
- 1 zucchini
- 1 tablespoon of sesame seeds
- 1 tablespoon of soy sauce
- 1 tablespoon of sesame oil
- 2 handfuls of ground nuts
Instructions:
- Heat the oil in a heavy-based pan. Finely slice the ginger, carrots, and zucchini and add these to the pan.
- Stir fry for 3-4 minutes, before adding the sesame seeds and soy sauce. Cook for a further 3 minutes.
- Add the noodle nests, plus four tablespoons of water, to the pan. Cook until the noodles are cooked and most of the water has steamed off.
- Sprinkle over the ground nuts and serve.
