Check Out This Quick and Easy Pasta Dish

Pasta has got to be one of the best go-to family meals. Quick, easy, and almost always delicious, pasta is popular with young and old alike. Next time you’re too rushed to plan dinner, turn to this simple recipe which uses mainly store-cupboard ingredients to create a healthy and tasty pasta dish. It’s highly versatile and can be easily adapted to suit your family’s tastes, so don’t feel like you have to rigidly stick to the ingredients listed here.

Ingredients (to serve 4):

  • 1 1/2 cups of dried pasta
  • 1 head of broccoli
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/4 cup of pitted olives, green or black
  • 1/4 cup of sun-dried tomatoes, oil drained
  • 2 cups of fresh salad leaves of your choice
  • 1 small handful of fresh basil leaves, torn

Instructions:

  1. Bring a large pan of salted water to the boil. Once it’s at a rolling boil, empty the pasta into the water.
  2. Meanwhile, slice the broccoli into small pieces and steam over a boiling pan for 4 – 5 minutes, until tender.
  3. Slice the olives and tomatoes into halves or quarters.
  4. Once the pasta is cooked, drain almost all of the water (leave about two tablespoons of water in the pan).
  5. Drizzle the olive oil and sprinkle the salt over the pasta.
  6. Stir the salad leaves, olives, tomatoes, and steamed broccoli through the pasta.
  7. Sprinkle over the torn basil leaves and serve immediately.
