Your Kids Will Love These Rainbow Frittatas

Mornings can be a scramble, but this recipe is here to change that! Rainbow frittata is a colorful, protein-packed breakfast that’s fun to make and even more fun to eat. It’s a great way to sneak in some veggies and get your little ones excited about starting their day.

Ingredients:

  • 6 eggs (whisked)
  • 1/4 cup milk
  • 1/4 cup shredded cheese 
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped broccoli florets (pre-steamed or microwaved until tender)
  • 1/4 cup cherry tomatoes, halved
  • Salt and pepper
  • Cooking spray

Optional Fun Toppings:

  • Fresh herbs 
  • Black olives 
  • Cooked sausage

Instructions:

  1. Preheat your oven to 375°F. Lightly grease a pie dish with cooking spray.
  2. Wisk in the chopped veggies and season with salt and pepper. 
  3. Pour the colorful egg mixture into the greased skillet. Sprinkle with your chosen cheese.
  4. Place the skillet in the oven and bake for 20-25 minutes, or until the center is set and a toothpick inserted comes out clean.
  5. Let the frittata cool for a few minutes before slicing it into wedges.
  6. Lastly, have your kids decorate their slices with some toppings: chopped herbs, black olives, or even crumbled cooked sausage for a more savory option.
