Ingredients:
- 6 eggs (whisked)
- 1/4 cup milk
- 1/4 cup shredded cheese
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped broccoli florets (pre-steamed or microwaved until tender)
- 1/4 cup cherry tomatoes, halved
- Salt and pepper
- Cooking spray
Optional Fun Toppings:
- Fresh herbs
- Black olives
- Cooked sausage
Instructions:
- Preheat your oven to 375°F. Lightly grease a pie dish with cooking spray.
- Wisk in the chopped veggies and season with salt and pepper.
- Pour the colorful egg mixture into the greased skillet. Sprinkle with your chosen cheese.
- Place the skillet in the oven and bake for 20-25 minutes, or until the center is set and a toothpick inserted comes out clean.
