Try This Simple One Tray Bake Next Time You Need a Quick Dinner

When you’re cooking for a family, you’re looking for quick, simple dinners that can be ready and on the table in under half an hour. Check out this super delicious, yet very simple tomato-based stew, which gets a protein boost from the eggs baked on top. If your kids have more adventurous taste buds, you can up the quantity of herbs and spices, otherwise serve it alongside fresh bread, pasta, or rice.

Ingredients (to serve 4):

  • 2 tablespoons of sunflower oil
  • 1 white onion
  • 2 cloves of garlic
  • 2 cups of new potatoes, peeled and scrubbed
  • 2 tins of tomatoes
  • 2 teaspoons of red wine vinegar
  • 1 teaspoon of caster sugar
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of smoked paprika
  • 4 eggs


  1. Finely slice the onion and dice the garlic cloves.
  2. Heat the oil in a pan and add the onion and garlic. Fry for 5 – 6 minutes.
  3. Add the tinned tomatoes, cayenne pepper, and smoked paprika. Stir well and cook for a further 4 – 5 minutes.
  4. Finely slice the potatoes and add them to the tomato sauce, along with a little water if needed.
  5. Add the vinegar and sugar to the sauce, and cook for 15 – 20 minutes, until the potatoes have softened.
  6. Crack the eggs into the top of the dish, and then place under a grill on medium heat and cook until the eggs are done.
  7. Serve immediately.
