This Tasty Pasta Dish has Plenty of Veggies for the Family

It can be hard sometimes to find meals that are healthy and tasty. Kids are often not interested in vegetables. This dish is different, as the veggies are hidden within the delicious pasta and sauce so you’ll all be getting a generous helping of vitamins and nutrients without even noticing. This recipe serves four. 


  • Pasta
  • 1 small onion
  • 1 red bell pepper
  • 1 zucchini
  • 1 cup frozen peas
  • 1 cup frozen sweet corn
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 tablespoon oil
  • 1 tablespoon plain flour
  • 2 cups milk
  • 1 cup shredded cheese 
  • 1 teaspoon smoked paprika 
  • Salt and pepper, to taste


  1. Cook the pasta according to pack instructions.
  2. Finely slice the onion and chop the pepper and zucchini into small pieces. 
  3. Heat some oil in a pan and add the onion, pepper, and zucchini. 
  4. Fry for 10 minutes and then add the basil, thyme, salt, and pepper. 
  5. Fry for a further 5 minutes, and then add the frozen peas and sweet corn and continue to fry for another 10 minutes. 
  6. Meanwhile, heat a tablespoon of oil in a pan and add the flour. Mix into a smooth paste and then gently pour the milk in. 
  7. Increase the heat until it starts to bubble. Add the paprika and then simmer for 10-15 minutes while stirring continuously.
  8. Once the sauce has started to thicken, remove it from the heat and stir the cheese in. 
  9. Pour the sauce and the drained pasta into the veggie pan. Gently heat it while stirring for 5-10 minutes before serving.
