This Lemon Posset is a Perfect Dessert for Family Dinners

Ingredients:

  • 1 cup raspberries
  • 2 cups double cream
  • 2 large lemons
  • 2/3 cup superfine sugar

Instructions:

  1. Grate the zest of the lemons and juice them into a cup to get all the liquid out. Remember to remove all seeds from the mixture.
  2. Pour the cup of lemon juice into a small saucepan. Add the greater zest along with the superfine sugar.
  3. Cook the mixture and bring it to a gentle simmer, constantly stirring as it cooks for 4 minutes.
  4. Remove the saucepan from the heat.
  5. Pour the cream into a medium saucepan. Over low heat, bring the cream to a gentle boil. Allow to simmer for 5 minutes. It’s important to slow cook so as to avoid spoiling the cream.
  6. Slowly whisk the lemon syrup and hot cream together.
  7. Divide the mixture among four glasses. Bring to room temperature.
  8. Place in the fridge for 4 hours.
  9. Remove from the fridge and allow to reach room temperature before garnishing with raspberries and serving.
