Ingredients:
- 1 cup raspberries
- 2 cups double cream
- 2 large lemons
- 2/3 cup superfine sugar

- Grate the zest of the lemons and juice them into a cup to get all the liquid out. Remember to remove all seeds from the mixture.
- Pour the cup of lemon juice into a small saucepan. Add the greater zest along with the superfine sugar.
- Cook the mixture and bring it to a gentle simmer, constantly stirring as it cooks for 4 minutes.
- Remove the saucepan from the heat.
- Pour the cream into a medium saucepan. Over low heat, bring the cream to a gentle boil. Allow to simmer for 5 minutes. It’s important to slow cook so as to avoid spoiling the cream.
