Ingredients (to make 12):

  • 2 cups of oats, half rolled and half jumbo oats
  • 1 cup of golden syrup
  • 1 cup of unsalted butter
  • 1 cup of light brown sugar
  • 1 cup of ground nuts (any mix will work)

  1. Melt the butter, sugar, and golden syrup in a pan until it creates a thick, dark syrup. Don’t let it boil or burn.
  2. In a large mixing bowl, stir together the oats and nuts.
  3. Stir through the melted sugar and butter into the oats, ensuring that everything is evenly coated.
  4. Grease and line an 8-inch x 8-inch baking tray. Heat the oven to 350 degrees F.
  5. Pour the mix into the baking tray and press it down firmly using a spatula.
  6. Bake in the oven for 25-30 minutes. The flapjacks will need up to an hour to set once removed from the oven.
