This Chicken Recipe Will Be Popular With Your Family

Sometimes, you just really need a recipe that everyone in the family will eat, and you can get on the table in under an hour. This tasty chicken recipe is simple, high in healthy protein, and sure to prove popular with even your fussiest eater.

Ingredients (to serve 4):

  • 4 chicken thighs or breasts
  • 2 onions
  • 1 leek
  • 4 cloves of garlic
  • 1/2 cup of apple cider vinegar
  • 1/2 cup of vegetable stock
  • 1 can of white beans
  • Black pepper
  • 2 tablespoons of sugar
  • 2 tablespoons of vegetable oil


  1. Heat one tablespoon of oil in a wide-based saucepan. Place the chicken pieces in, skin side down, and fry for 6-8 minutes. Then, turn and fry for a further 3-4 minutes.
  2. Remove the chicken from the pan and set aside. Roughly chop the leek and onions into slices around half an inch thick. Add the remaining oil to the pan and then add these vegetables. Cook for 5 minutes.
  3. Crush the garlic cloves and stir these into the vinegar. Add the sugar and then stir in the vegetable stock, and then add this liquid to the vegetables.
  4. Add the tin of beans, with their liquid, to the pan, and a good grinding of black pepper. Simmer for 5 minutes, and then add the chicken pieces.
  5. Simmer for 35 minutes, turning the chicken pieces halfway through. Serve alongside some rice or boiled potatoes.
