Ingredients:
- 1 diced onion
- 1 diced pepper
- 440ml coconut milk
- 1 tablespoons turmeric
- 1 piece of grated ginger
- 2 teaspoons vegetable oil
- 3 garlic cloves
- 4 salmon fillets
- 10 grams coriander
- 300 grams of basmati rice
Instructions:
- Pour a teaspoon of vegetable oil into a pan. Add the salmon and fry it with the skin side up for 4 minutes. Flip and cook for a further 2 minutes.
- Cook the rice as per the packet’s instructions.
- Fry the onion in the remaining vegetable oil for 3 to 4 minutes and add the garlic and ginger. Top up with turmeric and some water.
- Add the diced pepper and cook for another minute. Then, add coconut milk and simmer for 7 to 8 minutes.
- Toss the spinach into the mix and cook for 2 minutes. Return the salmon to the pan and cook for another 2 minutes.
- Serve with rice topped with coriander.
