If you need a cool treat to beat the heat, look no further than these fruit-based ice pops. Easy to make, and popular with the kids, everyone will be clamouring for one of these!
Blueberry, Pineapple and Coconut
Ingredients (to make 10 ice pops):
- 1 cup of fresh or frozen blueberries
- 1 cup of pineapple juice
- 1 cup of coconut milk
Instructions:
- Place all of the ingredients in a blender and blitz until smooth.
- Pour the mix into ice pop moulds and freeze for at least 2 hours, until frozen solid. Don’t forget to place wooden sticks in the molds before they freeze.
- Remove from the freezer and allow to thaw for 5 minutes before removing from the molds and serving.
Banana, Mango, and Raspberry
Ingredients (to make 10 ice pops):
- 3 bananas
- 2 ripe mangos (or 1 1/2 cups of mango puree)
- 1 cup coconut milk
- 1 cup of fresh or frozen raspberries
Instructions:
- Peel the bananas and mango, slice the fresh fruit, and place into a blender along with the coconut milk and raspberries.
- Blitz until smooth, then pour into ice pop molds.
- Freeze for at least two hours or until frozen solid.
Mint Chocolate
Ingredients (to make 10 ice pops):
- 1 cup of dark chocolate
- 2 cups of milk
- 3 bananas
- 2 tablespoons of fresh mint
Instructions:
- Peel the bananas, and chop or break the chocolate into pieces.
- Place all of the ingredients into a blender and blitz well.
- Pour into ice pop molds, and freeze for at least 2 hours.
