With summertime just around the corner, the excitement for the warmer weather and longer days is hard to avoid. After months of long winter, the gradual build-up of the spring and summer seasons is welcomed by many. As well as the more favorable weather and the relaxed ambiance, summer is amazing for the incredible food and drinks available. A particularly great aspect of summer foods is the abundance of delicious, fresh fruits. This recipe for frozen fruit popsicles takes advantage of these excellent seasonal products and turns them into a delicious, sweet, healthy, and refreshing treat that kids and grown-ups will love. This recipe makes six popsicles.
Ingredients:
- 2 cups apple juice
- 2 cups diluted blackcurrant squash
- 1 cup strawberries
- 1 cup blackberries
- 2 kiwis
Instructions:
- Chop each blackberry in half.
- Destalk the strawberries and then cut each one into quarters.
- Peel the kiwis and then slice them into 1cm cubes.
- Take the popsicle mold and divide the strawberries evenly between them.
- Repeat the above step for the kiwi pieces and then for the blackberries.
- Mix the apple juice with the blackcurrant squash.
- Pour the juice and squash mixture into each popsicle mold until there is an equal amount in each one.
- Carefully transfer the popsicle tray to the freezer.
- Leave in the freezer for 2-4 hours, until the liquid has completely frozen and solidified.
- Remove from the freezer and leave to stand for 5 minutes before enjoying.
