Check Out This Summer Salad Recipe Which Your Kids Will Love

Many kids automatically turn their nose up at salad, but during the hot summer days some will relent and try some lettuce, cucumber and tomato. Why not whip up this easy, simple summer salad—the basic dressing and simple ingredients make it more likely that your kids will try a bowlful on a warm summer’s day. To maximize the chances of them trying it, why not ask them to help out with the preparation? Often, this can be enough to encourage children to try new foods they believe they won’t like.

Ingredients (to serve 4):

  • 1 cucumber, peeled, deseeded and sliced into rounds
  • 3 beef tomatoes, quartered
  • A small bunch of fresh basil, leaves shredded
  • 2 ripe avocado, pitted and cubed
  • 2 lettuce heads, leaves shredded
  • 2 handfuls of black olives, pitted and finely sliced
  • 1 teaspoon of olive oil, for drizzling
  • 1/4 of a lemon

Instructions:

  1. Take a large salad bowl.
  2. Arrange the tomatoes, cucumber, avocado and lettuce leaves in the bowl.
  3. Sprinkle over the sliced olives and torn basil leaves.
  4. Finish by drizzling over the juice of the lemon quarter and the olive oil.
  5. Serve immediately.
