It’s summer, so it’s only natural that your kids will want as many sweet treats and goodies as possible, to enjoy over their long vacation from school. However, if like many parents you’re concerned by the ingredients in lots of store-bought treats, why not have a go at making your own? These simple ice pops only contain a few ingredients, and will be enjoyed by kids and adults alike. Better yet, they are easily customisable, so add in your family’s favorite fruits to ensure they are a big hit.
Ingredients (to make 8):
- 8 popsicle sticks
- Popsicle mould
- 1 tin of coconut milk
- 2 tablespoons of water
- 4 tablespoons of mango puree
- 2 ripe bananas
- 1/2 cup of fruit of your choice (for example, raspberries, chopped strawberries, chopped peaches)
Instructions:
- In a food processor or blender, blend the coconut milk and water with the mango puree until absolutely combined.
- Add the chopped bananas to the mix and blitz well.
- Add the fruit of your choice, stir gently through the mix with a spoon.
- Pour the mix into the popsicle mould, make sure you remember to add a popsicle stick to each one so you can remove it from the mould.
- Place in the freezer for 2 – 3 hours, until frozen solid.
