Ingredients:

  • 2 cups of self-raising flour
  • 1 teaspoon of baking powder
  • 1 cup of unsalted butter
  • 1 cup of caster sugar
  • 3 tablespoons of poppy seeds
  • 2 eggs
  • 1 medium zucchini, grated
  • 1 lemon, zested and juiced

Instructions:

  1. In a large mixing bowl, beat the butter and sugar together until the mix is pale and smooth.
  2. Sift in the flour and baking powder, mix until the batter is pale and smooth.
  3. Add in the eggs, lemon juice, poppy seeds and grated zucchini. Mix well to combine.
  4. Pour into a lined and greased cake tin.
  5. Bake in the oven at 400°C for 40 minutes.
  6. Remove the cake from the oven and allow to cool.
  7. Scatter over the lemon zest before serving.
