Ingredients:
- 2 cups of self-raising flour
- 1 teaspoon of baking powder
- 1 cup of unsalted butter
- 1 cup of caster sugar
- 3 tablespoons of poppy seeds
- 2 eggs
- 1 medium zucchini, grated
- 1 lemon, zested and juiced
Instructions:
- In a large mixing bowl, beat the butter and sugar together until the mix is pale and smooth.
- Sift in the flour and baking powder, mix until the batter is pale and smooth.
- Add in the eggs, lemon juice, poppy seeds and grated zucchini. Mix well to combine.
- Pour into a lined and greased cake tin.
- Bake in the oven at 400°C for 40 minutes.
- Remove the cake from the oven and allow to cool.
- Scatter over the lemon zest before serving.
