We all need energy to get us through the day, and some days are harder than others. If you’re used to reaching for a store-bought energy bar after lunch, or if you’ve got into the habit of putting them in the kids’ lunchboxes, why not use these three easy recipes to create your own natural energy boost bars for the whole family to enjoy?
Date, Oat, and Peanut Butter
Ingredients (to make 12 bars):
- 1/2 cup of chopped dates
- 1/2 cup of oats
- 3 tablespoons of peanut butter
- 2 tablespoons of chia seeds
- 1/2 cup of water
- 1 teaspoon cinnamon
Instructions:
- Soak the oats and the dates in the water. Stir through well.
- Add the peanut butter, chia seeds, and cinnamon to the oats and dates.
- Knead the mix so that everything is well combined. Shape into bars.
- Transfer onto a tray lined with greaseproof paper, and store in the fridge until you’re ready to eat the bars. They will keep in the fridge for up to 1 week.
Chocolate, Goji Berry, and Flaxseed
Ingredients (to make 12 bars):
- 1/2 cup of dark chocolate pieces
- 2 tablespoons of coconut oil
- 1/4 cup of dried goji berries
- 1/3 cup of flaxseeds
Instructions:
- Melt the coconut oil and chocolate together.
- Once the mix is liquid, add the berries and flaxseeds. Stir through well.
- Transfer to a tray lined with greaseproof paper and keep in the fridge for 2 hours to allow the bars to set.
- Slice the bars into 12 portions once they have cooled.
Oat, Apricot, and Chia Seeds
Ingredients (to make 12):
- 1 cup of oats
- 1/2 cup of chopped dried apricots
- 1/2 cup of chia seeds
- 1/2 cup of water
- 2 tablespoons of coconut oil
Instructions:
- Melt the coconut oil in a pan and add the oats, stir through to coat the oats.
- Stir the chia seeds into the water and set aside for 5 minutes.
- Add the apricots to the oats, and stir through well.
- Add the chia seeds to the oats, and stir through well.
- Knead the mix to combine everything, shape into bars, and store in the fridge for up to 1 week.
