3 Easy School Day Breakfasts

On mornings when you’ve got to get everyone in the household out to work and school on time, breakfast can take a back seat. But it’s important for children to eat something in the morning to fuel them for the day. Check out these easy, make-ahead breakfasts so you’ve got a little more time each morning.

Mango and Yogurt Oats

This can easily be adapted to suit your child’s tastes, just swap out the mango for another type of fruit.

Ingredients (to serve 4):

  • 1 cup of oats
  • 1/2 cup of milk or water
  • 3 tablespoons of chia seeds
  • 3 tablespoons of mango puree
  • 3 tablespoons of natural yogurt

Instructions:

  1. In a large bowl or in separate pots, stir all of the ingredients together.
  2. Store in the fridge overnight, before serving stir well and add a little more yogurt if desired.

Peanut Butter and Banana Squares

Ingredients (to serve 4):

  • 1 cup of oats
  • 3 ripe bananas
  • 3 tablespoons of peanut butter
  • 1/4 cup of milk
  • 3 tablespoons of chopped dates

Instructions:

  1. Stir the milk into the oats, and allow to sit for 5 minutes.
  2. Stir the peanut butter through the oats.
  3. Chop the bananas and add these and the dates to the mix.
  4. Shape into bars or squares and store in the fridge overnight.

Cheese and Tomato Muffins

Ingredients (to serve 4):

  • 1/2 cup of tomatoes
  • 4 eggs
  • 3/4 cup of grated cheese
  • 2 tablespoons of flour
  • 2 tablespoons of milk

Instructions:

  1. Crack the eggs into a bowl and whisk well.
  2. Stir in the milk and flour, and mix well to combine.
  3. Stir in the grated cheese and chopped tomatoes.
  4. Pour into a muffin tray and bake in an oven heated to 350°F for 15 minutes.
