Making interesting lunches every day is hard enough, without having to cater separately for your kids. The chances are, if you’re anything like most parents, you want tasty and versatile dishes that the whole family can enjoy—and you want them to be ready and on the table in under half an hour. Check out this great recipe for egg-topped tortilla wraps—you can add or take away ingredients to change the flavors, and they will be super popular with kids and adults alike.

Ingredients (to serve 4):

  • 4 tortilla wraps
  • 7 medium eggs
  • 2 tablespoons of oil
  • 1/2 cup of grated cheese
  • 1 cup of spinach, wilted in a pan
  • Salt and pepper, to taste
  • 2 tablespoons of tomato paste

Instructions:

  1. Heat the oil in a medium-sized frying pan.
  2. Whisk the grated cheese into the eggs, and season with salt and pepper.
  3. Stir the wilted spinach in through the egg.
  4. Spread a thin layer of tomato paste over one side of each tortilla.
  5. Place one tortilla into the hot oil with the tomato paste side facing up. Fry for 1 minute.
  6. Carefully pour some of the egg mix over the top of the tortilla, taking care that it doesn’t slide off the tortilla. Fry for 3 to 4 minutes.
  7. Once the egg is starting to set, carefully fold the tortilla in half using a spatula. You can also flip the tortilla at this point if you wish, but if the egg isn’t set enough there is a risk you may lose some of your topping.
  8. Once the tortilla is browned and the egg is set, remove the tortilla from the pan.
  9. Repeat this process until all of the tortillas are cooked.

Many kids gravitate towards fast food options as their favorite meals, and for lots of children burgers and fries are hard to beat. Whilst you may not love the idea of your children eating this meal on repeat, if you’re making it at home there are lots of ways to reduce the calories, fat, and salt and ensure the meal delivers some nutritional benefits, whilst still being super tasty. Check out these tips on how to create a healthier burger and fries.

The Burger

Make your own burger patties, using a mix of five to ten percent fat minced with some canned beans and onions. Fry the onions in a little oil, add whichever seasonings you wish, then mash the beans with a fork before adding to the pan. Add the meat, fry until cooked through, and then use an egg and some flour to bind the patties together. Making the burgers from scratch gives you control over the ingredients, and you can bulk out some of the higher-fat mince with super healthy beans whilst losing none of the flavor.

Insist on a Green Side

Whether it’s a side of peas, a salad, or even some steamed broccoli, make a point of serving your homemade burger and fries with some sort of vegetable. Between the beans in the burgers and this vegetable portion, this helps to make the meal more nutritionally balanced.

Use an Air Fryer

Cooking the fries in an air fryer, as opposed to a traditional deep fat fryer, will significantly reduce the calorie content of the fries, whilst losing none of the taste.
