Make This Breakfast for Your Family on the Weekends

Weekend mornings are the perfect opportunity to slow down, savor a delicious meal, and spend quality time with your family. Treating your loved ones to a special breakfast can set a positive tone for the day and get everyone feeling good. Here’s a breakfast recipe that’s sure to delight the whole family.

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups of milk
  • 1 egg
  • 3 tablespoons melted butter or vegetable oil
  • Fresh fruit of your choice (such as sliced strawberries, blueberries, bananas, or raspberries)
  • Maple syrup or honey, for serving

Instructions:

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined. In a separate bowl, beat the egg, then stir in the milk and melted butter or oil until smooth.
  2. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
  3. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges begin to look set, then flip and cook for another 1-2 minutes, or until golden brown and cooked through. Repeat with the remaining batter, stacking the cooked pancakes on a plate and covering them with a clean kitchen towel to keep warm.
  4. While the pancakes are cooking, prepare the fresh fruit topping by washing and slicing your choice of fruit. Serve the warm pancakes with a generous drizzle of maple syrup or honey and a handful of fresh fruit on top.
